Mincemeat Cookies

According to Valorie, these mincemeat cookies were 'Santa's" favorites. Read her Christmas memory to find out why.

  • 1 cup shortening
  • 1 1/2 cups sugar
  • 3 eggs
  • 3 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 (14 ounce) can mincemeat (1 1/3 cups)

METHOD

Preheat oven to 375°F.

In large mixing bowl, beat shortening and sugar until fluffy. Add eggs and beat well.

In separate bowl, stir together flour, salt and baking soda. Add gradually to shortening mixture. Mix well. Stir in mincemeat. Stir until well combined.

Drop by rounded teaspoons, 2 inches apart, onto greased baking sheets.

Bake 8 - 10 minutes or until lightly browned in preheated 375° F oven.

Yield: 6 dozen
