METHOD
Mix flour, baking powder and soda in a small bowl.
Combine molasses, sugar and butter in a saucepan. Bring to a full boil and cook 1 minute. Remove rapidly from heat.
Stir flour mixture and coconut into liquid mixture. Stir to combine.
Drop by 1/2 teaspoonfuls on baking sheets that are lightly greased or covered with parchment paper. Bake in preheated 350° F oven. for 5 to 8 minutes. These are delicate, so allow to cool just a little, then remove carefully. Place on wire rack to cool, or roll around wooden spoon (good to not conduct heat) to form small tubes.
Optional: drizzle melted sweet chocolate over wafers.
Yield: About 2 - 3 dozen wafers
