Old Fashioned Spice Biscuits

"These biscuits were made when my great-great grandparents, who were sheep farmers in the Namaqualand region, were moving about to find grazing for their animals.The baking was done in an outside oven a fire was made in the oven and the coals removed, then you had to test the heat by holding your hand in the oven for a certain count (11) before it would be the correct heat."   • 1 1/2 cups butter or fat
  • 6 eggs
  • 9 cups of flour
  • 9 teaspoons of baking powder
  • 4 cups sugar
  • 1 1/2 teaspoons fine cloves
  • 2 teaspoons ginger
  • 3 teaspoon cinnamon
  • Salt

 

 

METHOD

Preheat oven to 350°F.

Melt butter. When slightly cooled, mix in eggs.

In a large bowl, mix together flour, baking poder, sugar spices, and salt. Stir in butter/egg mixture. Combine thoroughly.

Roll out and cut into rounds. These should be rather large rounds. (Marieta makes them twice as large as the normal biscuit.)

Bake in preheated 350° F oven until golden brown.

Yield: about 2 dozen
