Indian Chicken Pakoras

This is a versatile Indian dish - similar to a fritter.  Please also try the basic Indian parkoras or the Indian chicken Pakoras recipes.

Chicken

  • 1 kg (2 pounds) small boneless chicken cubes
  • 1 tablespoon salt
  • 1 tablespoon red pepper powder
  • 1/2 cup lemon juice or squeeze 2 whole lemons
  • 1/2 teaspoon ground cumin powder
  • 1 teaspoon garlic paste
  • 1/2 teaspoon ginger paste

Batter

  • 2 cups gram flour
  • 1/4 cup water.
  • 1 teaspoon salt,
  • 1/2 teaspoon red pepper powder,
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon baking soda
 

METHOD

Chicken: Mix well and allow to marinate for about an hour.

Batter: Mix everything into a smooth paste and allow to sit for about _ hour before adding chicken.

Frying the pakoras: Add the chicken to the batter and mix well.

Heat 2-3 cups of oil (about 1/4 of a deep frying pan).

When oil is VERY hot (test with a drop of batter to see if batter sizzles), start dropping cubes of chicken into the oil.

Lower heat to medium low and fry at medium heat for about 2-3 minutes or until tender and golden.

Remove from oil onto absorbent paper towel to drain excess oil

Serves: 6 as snack or side dish
