Cuca's Cornbread

"My favorite recipe is probably Cuca's Cornbread. This recipe was given to me by a friend at church, Kathleen Jones. Her grandmother is Cuca. The recipe is a staple in our house. Incidentally, if you have access to fresh ground cornmeal, from a mill, I highly recommend using that. The better the quality the better the results." Luci Landauer

  • 1 cup sugar
  • 1 cup butter (melted)
  • 4 eggs
  • 1 16 ounce can creamed corn
  • 1/2 cup Monterey Jack cheese
  • 1/2 cup Cheddar cheese
  • 1 cup flour
  • 1 cup yellow corn meal
  • 4 teaspoons baking powder

 

 

METHOD

Preheat oven to 350°F.

Mix sugar and butter together. Stir in eggs, cheese, flour, corn meal and baking powder. Stir until mixed thoroughly.

Pour into greased 9x13 casserole (Stones are best!)

Bake in preheated 350°F oven for 30 minutes. Spread some butter on the crunchy top when done.

This recipe is so sweet already, I don't even add honey, but it is up to you. My husband still does.
