This
calls for crackling, but you can substitute crisp, crumbled bacon. Be sure
to get your skillet hot - this will give you the brown crust so valued by
southerners.
1 1/2 cups cornmeal
4 tablespoons flour
1 teaspoon baking soda
1 teaspoon salt
1 cup cracklings (or crisp,
crumbled bacon)
1 egg
1 1/2 cups buttermilk
1 tablespoon bacon fat, melted
METHOD
Preheat oven to 450°F.
Sift dry ingredients
together and stir in cracklings.
Beat egg in buttermilk
and add to mixture. Heat melted fat in hot skillet. Pour batter into hot
skillet.
