Preheat oven to 425°F
Put sifted flour, salt,
dry mustard and cayenne in a bowl. Rub in margarine with fingertips. Tip
in grated cheese and mix in beaten egg with a wooden spoon. If mixture
is too dry add a little milk to make nice firm dough.
Tip out onto a floured
board and press lightly with the palm of the hand until the dough is about
one inch thick. Cut into rounds with a cutter and place these on a greased
baking sheet. Sprinkle each one with a little grated cheese and cook in
a preheated 425° F (210° C) oven for about 10 minutes, when they
should be a lovely golden brown.
