Orange Nut Bread

  • 1 medium orange, juice and zest
  • 1 cup raisins
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla
  • 1 beaten egg
  • 2 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup sugar
  • 1/2 cup pecans or walnuts

 

Method

Preheat oven to 350°F.

Grate zest from orange and set aside.  Squeeze juice from orange into 8 oz measuring cup.  Add boiling water to fill.  Water must be warm so butter does not harden when you add it.

Mix orange zest and raisins. Stir in orange juice.When blended, add melted butter, vanilla and egg.

Mix all dry ingredients but the nuts together.  Add to liquid ingredients and beat well. Fold in nuts.

Bake in wax-paper lined loaf pan at 350°F for an hour or until a tester comes out clean.  Cool on a wire rack before removing from pan.
