Dilled Bread

    • 1 package dry yeast
    • 1/4 cup warm (not hot) water
    • 1 cup cottage cheese
    • 2 tablespoons sugar
    • 1 tablespoon instant minced onion
    • 1 tablespoon butter
    • 2 teaspoons dill seed
    • 1 teaspoon salt
    • 1/4 teaspoon baking soda
    • 1 egg, beaten
    • 2-1/2 cups all-purpose flour

 

 

Method

Prepare a standard glass or metal bread pan by greasing well or spraying with non-stick cooking spray.

Soften yeast by placing in warm water.

Heat cottage cheese until warm, but not hot, by placing in the microwave on high for about 30 to 60 seconds.

In a medium bowl, combine cottage cheese, sugar, minced onion, butter, dill seed, salt and soda. Mix well.  Add egg and yeast. Mix well.  Add flour in thirds, beating well after each addition to form soft dough. Cover and let rise in a warm place for about 50 to 60 minutes, until doubled in size.

Punch down dough and turn into prepared bread pan. Let rise in a warm place for another 30 to 40 minutes.

Bake in a preheated 350 F oven for 40 to 50 minutes.

After removing from oven, brush the top of the bread with melted butter and sprinkle with salt.  Let cool in pan for 15 to 20 minutes, then remove and continue to cool on a wire rack.
