Classic Pesto Done in a Food Processor

  • 3/4 cup extra virgin olive oil
  • 1 garlic clove
  • 2 tablespoons pine nuts
  • 1/4 teaspoon salt
  • 1/4 cup freshly grated Parmesan cheese, about 1 ounce
  • 1 large bunch of fresh basil, about 4 cups leaves only, loosely packed
 

Method

Chop basil leaves coarsely.   Place all of the ingredients except the basil in a blender or food processor. Blend until smooth, then add the basil a little at a time, blending until all of the basil is incorporated and the pesto is somewhat smooth but still has texture.

Yield: 1 cup
