Pesto Meat Loaf

  • 8 slices bacon, cooked and crumbled
  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1 hot uncooked sausage, casing removed
  • 1 onion, finely chopped
  • 1/2 pound mushrooms, finely chopped
  • Salt and pepper to taste
  • 1 egg, beaten
  • 1/2 cup seasoned bread crumbs
  • 1/2 cup pesto (see below)
 

Method

Preheat oven to 375¯F. 

In a large bowl, thoroughly mix all ingredients together. Be sure ingredients are well-blended, but do not overwork. 

Form meat mixture into a cylindrical shape and place in a shallow roasting pan. Bake for 1 1/4 hours in preheated oven.

Pesto: Combine the following in a food processor and process until smooth but still chunky.  Texture is an integral part of a good pesto.-

  • 1/2 cup fresh basil
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 clove garlic
