No food satisfies a family, gathered to share a meal at the end of the day, quite like a casserole.  A casserole is that meal-in-one, a mingling of tastes, textures and nutritional goodness.  Easier to prepare than several separate courses, the mingled flavors in a casserole always produce a savory dish that satisfies everyone at the table.  This is the perfect comfort food, the perfect family food, and with a compendium of 500 recipes, there are great family times ahead.  Among the assembled recipes are classic dishes, many reworked by author Rebecca Baugniet to reflect current scientific health knowledge without sacrificing taste, as well as new dishes for today's busy cook.

Life in the kitchen changes from day to day: one day we need festive dishes and have time to create a spectacular dish; on another day we need time, but cannot find it; on yet another day we decide to forgo meat.  Often we want to cook in large portions so we can freeze for that busy day, and casseroles are among the easiest to freeze.

Knowing the daily changes, Baugniet breaks the chapters into ten divisions for easy reference:

Family Feasts
Pasta & Rice Casseroles
Elegant Fare
Meat Casseroles
Poultry Casseroles
Fish & Seafood Casseroles
Vegetarian & Vegan Casseroles
Light Casseroles
Quick & Easy Casseroles
International Favorites.

Within these chapters Baugniet offers recipes that represent the world-wide taste that we have developed.  You will find recipes for Tamale Casserole, Tortilla Lasagna, Scalloped Potatoes with Prosciutto and Curried Chicken with Potatoes all in the same chapter.

While she mixes and plays, enjoys fusing disparate ingredients, Baugniet also respects traditions, and that means respecting the classic dishes that have nourished and comforted people through the centuries.  You will find recipes for Boeuf Bourguignon and Coq au Vin, a rich Risotto with Pancetta and Parmesan, a Polenta Casserole with Italian Sausage, an Irish Stew or a French Pot au Feu.

Focusing on vegetarian, vegan, and light dishes, Baugniet offers recipes such as Autumn Squash Casserole, Leek and Barley Casserole,  Eggplant & Zucchini Bake, Chilaquile Casserole, Chickpea Tagine with Currant Couscous.  For light meals try Lentil & Root Vegetable Casserole, Lemon Chicken with Kasha,  or a Dijon turkey Stew.

The 500 recipes reflect all our favorite casseroles and more - there is everything here to comfort, to impress, or simply to satisfy a large or small family's appetite.  There are color photos throughout and variations on each central recipe.

About the Author: Rebecca Baugniet is a freelance food writer and recipe developer living on Canada's West Coast with her husband, artist Dave Hogg, and their three children. She is the author of 500 Pies and Tarts and 500 Pizzas and Flatbreads, and worked as food consultant on 500 Appetizers and 500 Soups. Rebecca's appreciation for casseroles grew when she became a mother and discovered how convenient it is to prepare a well-balanced meal in one dish. She particularly enjoys taking retro favorites and giving them a contemporary spin. Extensively tested on her own family, Rebecca's casseroles are all about finding the perfect combination of delicious health-conscious, economical and comforting foods.
